When I was growing up, every once ina while my dad would make “Grandmother Ellen’s Oatmeal Raisin Cookies”. It was a nice thought, but no one would ever eat them besides him because of the raisins! Sorry, Dad-o! So instead of writing off the whole idea of the oatmeal cookie, I kicked those yucky raisins to the curb and put something I can’t get enough of in them instead – chocolate. Now you could use any kind of chocolate really, by my fave is dark chocolate, so that’s what you’re getting from me today.
Here’s the recipe for these yummy dark chocolate oatmeal cookies that you’re sure to love!
Ingredients
- 14 tablespoons butter (1 & 3/4 sticks), softened
- 3/4 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 & 1/2 cups flour
- 1 teaspoon baking soda
- 3 cups Quaker Oats (quick or old fashioned)
- 1 cup chocolate chips (I prefer dark)
Instructions
Step One. Preheat the oven to 350 degrees.
Step Two. In a large bowl, beat butter and sugars until creamy. Add eggs and vanilla and mix well.
Step Three. Add in flour, baking soda, and salt and mix well. Add in oats and chocolate chips and stir until well blended.
Step Four. Drop dough by rounded tablespoons onto un-greased cookie sheets. Bake 8 to 10 minutes or until light golden brown.
