Warm and Flaky Mini Blueberry Pie Pops

I love sweets. At any kind of gathering, I always seem to gravitate towards the dessert table. I can’t help it! So when it comes to the holiday season of get togethers and family style buffets, I need all the help I can get! That’s why I love these mini pies so much! They’re portion controlled so I won’t each too much and they’re cute as can be! Also, if your family is like mine and everyone likes different flavors of pie, you can easily make everyone their own mini pie with their favorite flavor! It’s so much better than having a ton of pie left over that no one needs to eat that much of. Here’s how to make them.

Ingredients:

  • 2 refrigerated pie crust
  • 5 tablespoons pie filling (I used blueberry but any flavor will work)
  • cooking spray
  • pop sticks
  • 4 inch diameter cookie cutter

Step One. Preheat the oven to 400 degrees. Roll out your pie crust and use your cookie cutter to cut out circles. You should get about 5 circles out of each whole pie crust. Put the scraps aside.

Step Two. Place five circles on the cookie sheet (I always line mine with parchment paper) and put a pop stick on top of them with the stick starting in the middle of the circle. Next, add 1 tablespoon of pie filling on top of each circle.

Step Three. Next, you can design the remaining circle “tops” however you like. You can use other cookie cutters for fun shapes, use a straw for a polka dot effect, or just get in there with a knife and freehand it! Once you’re done, place the circles on top of their counterparts on the cookie sheet. Use a fork to press the edges closed.

Step Four. Spray the cooking spray over the tops of the pies. This will gave it a more golden crust. Put the pies in the oven for 12 minutes.

This recipe makes 5 mini pies.
