I love sweet potato casseroles. At our Thanksgiving dinner there is always the debate as to which is better on top – marshmallows or pecans. But why not have both? These 3 bite sweet potatoes are the perfect side dish or appetizer!
Tip: Only put the ingredients on the sweet potatoes as you need them. That way, your leftovers in the fridge won’t produce soggy marshmallows on top of your dish!
Ingredients:
- sweet potatoes
- granulated sugar
- ground cinnamon
- salt
- large marshmallows
- olive oil
- pecan halves
Step One. Preheat the oven to 400 degrees. Slice the sweet potatoes into rounds about 1/4 inch thick. coat them in olive oil and lay them in one layer on a baking sheet.
Step Two. Sprinkle the sweet potatoes with generous amount of sugar and cinnamon and a little salt.
Step Three. Bake the sweet potatoes in the oven for 12 minutes. Take them out, flip them over, and bake them for another 12 minutes or until tender.
Step Four. Place a marshmallow on each sweet potato and put under the broiler for about 30 seconds or until lightly browned. Seriously, don’t walk away from it. They go from white to black super fast – so don’t take your eyes off of them!
Step Five. After they’re out of the oven, place a pecan on top of each marshmallow and press down.
