I love meals that I can make ahead and then stick in the oven while I’m getting ready to go over to some one’s home. And this recipe is one you’ll get asked to bring with you time and time again, at least that’s been my experience with it.
Prep Time: 15 minutes
Cook Time: 20 minutes
Ingredients:
- 1 small bag of small yellow potatoes
- 2 teaspoons olive oil
- salt and pepper
- 1 slice of chopped, cooked bacon (or 1/4 cup pre-made bacon bits)
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup chives (chopped)
I started with Potato Goodness’ recipe, and adapted it to make it easier and a little more cheesy.
Step One. Pre-heat the oven to 450°F.
Step Two. Cut the potatoes in half (lengthwise). Put the potatoes in a 13×9 baking dish or cookie sheet and toss them with the olive oil.
Step Three. Arrange the potatoes cut side up (they can be touching) and sprinkle them generously with salt and pepper.
Step Four. Cook in the oven until fork tender, or about 15 minutes.
Step Five. Dollop the sour cream on each potato half. I like to use a seal-able plastic bag to help make this easier, by putting the sour cream in the bag, snipping off the tip, and making a make-shift pastry bag.
Step Six. Top each potato bite with shredded cheese, bacon bits, and chives. I tend to choose either bacon or chives to top it off and not both. That way, people can also choose which type they’d like. Place them back in the oven until the cheese is melted (about 5 minutes).
