S’mores Marshmallow Pops

I love s’mores.

Make them over a campfire, in the microwave, or baked into tart pan and I volunteer to be the taste tester! I’m not sure what it is exactly about these nostalgic treats that make me go gaga. Marshmallows are delicious all by themselves chocolate too, but the graham cracker gives that much needed texture bringing all of the flavors together.

That’s exactly the same taste and mouth feel you’ll get when making these tasty s’mores marshmallow pops. They’re super easy to make for just a random weeknight treat and they’re perfect to serve at a party because they can be made ahead and easily eaten like finger foods.

What Else Can I Use Besides Graham Cracker Crumbs?

If graham cracker crumbs aren’t your thing (or you don’t have any on hand), you can always use these substitutes. Sprinkles, finely chopped nuts (pecans and pistachios work well), and coconut flakes would be great too.

How can I make these more colorful?

For my son’s 4th birthday party, I dipped marshmallows in vanilla melting wafers with red food coloring. It was perfect for little mouths and the white color allows them to be made into any color of the rainbow!

How long do these smores pops last?

We usually don’t have leftovers when I make them, but they’ll last up to 2 weeks in the refrigerator.



Smores Marshmallow Pops

Soft marshmallows are coated in melted chocolate and dipped into graham cracker crumbs in order to achieve the perfect party portion of a s’mores dessert.

  • 20 Large marshmallows
  • 8 oz chocolate melting wafers
  • 1 cup Graham cracker crumbs
  • 20 Treat sticks
  1. Line a baking sheet with parchment paper.

  2. Take one of the treat sticks and press it through the center of a marshmallow.

  3. Melt the chocolate melting wafers until it is a smooth consistency. Remember not to overheat it or your chocolate will seize up and become chunky and unusable.

  4. Dip the marshmallow into the melted chocolate until it is halfway up the sides of the marshmallow. Immediately after, dip the marshmallow into the graham cracker crumbs.

  5. Place the pop on your prepared cookie sheet and place it in the fridge for at least 10 minutes.

Depending on the depth of your chocolate vessel, you may need to rotate the stick on its side a bit in order to get the chocolate up on the sides of the marshmallow.
