The idea of having neighbors is a unique concept for me. I know that may sound weird to some people, but let me explain. I’ve always lived on lots land – with lots of space between houses. So all that space doesn’t really lend itself to have anything more than friendly waves with your “neighbors”. But when my husband and I bough our house 6 years ago, we purposely bought a home in a subdivision. We wanted to have kids and sidewalks and people. We love the space (and sometimes I think about going back), but what we have now (and where we are now) is truly a great thing.
Our subdivision is a little older. The homes were mostly built in the mid-nineties and before that. There’s no HOA. There’s mostly retirees and empty-nesters. But we love it. We know all of our neighbors (with the exception of one hermit that is never outside and refuses to wave as she passes by, but whatevs). One couple makes us cookies every Christmas Eve. Another family has three generations living under one roof and we know all of them by name. But our world was totally rocked about a year ago when a young family moved in. I’ll never forget the first time I met them. I was playing with the kids in the driveway and this little boy walks across the lawn – or rather, being pulled by his dog over to great us. My son and he hit it off immediately. They’re the same age. They love all of the same things. If you looked at them, they look like night and day – but their hearts are the same. They’re sweet, and silly, and adventurous. They pretend they’re super heroes and trade their toys like playing cards. They can play for hours and have the same crazy imagination.
These two little boys showed us what it is to be a neighbor. Because of them, my husband and I have become close with the little boy’s parents. We share recipes, tips about school stuff, and ideas for summer activities (they did ninja camp together this past summer and had a BLAST!). One such recipe is this one for cheddar and chive souffles. We both decided to start the keto diet (separately too – weird!) and I made this one night and decided to take a couple over there for them to try. We all agreed – they were delicious! So I’m sharing the low-carb recipe from All Day I Dream About Food with you!
Ingredients:
- 1/2 cup almond flour
- 1 teaspoon salt and 1 pinch
- 1 teaspoon ground mustard
- 1/2 teaspoon black pepper
- 1/2 teaspoon xantham gum
- 1/4 teaspoon cayenne pepper
- 3/4 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- 1/4 cup chopped fresh chives
- 6 large eggs, room temperature and separated
- 1/4 teaspoon cream of tartar
Instructions:
- Preheat the oven to 350 degrees and grease 8 six ounce ramekins. Place ramekins on a large cookie sheet.
- In a large bowl, whisk together the almond flour, 1 teaspoon salt, mustard, pepper, xantham gum, and cayenne. Add in the cream, egg yolks, cheese, and chives. Mix well.
- In a large bowl, beat egg whites with cream of tartar and pinch of salt salt until stiff peaks form and mixture is glossy. Gently fold in the egg whites into the cheese mixture.
- Divide mixture among prepared ramekins and bake for 25 minutes (or until the souffles are golden brown on top.
- Serve immediately.
