3 Ingredient Savory Roasted Potatoes

It’s not very often that I make steak. In fact, I can probably count on one hand how many times that’s happened in my lifetime. But something came over me the other day and when I saw there were steaks on sale at the grocery store, I made an impulse buy and got them. But what to serve with them? If you said “meat and potatoes”, then you’d be right.

But I didn’t want to do the same old thing with potatoes. I wanted something different that my kids could eat without me having to cut up for them. And then I found these baby potatoes. They’re about an inch to an inch and a half in diameter, and they’re the perfect bite-size potatoes. Add some seasoning, roast them in the oven, and voila! An easy side dish that is so good, my husband calls them candy!

This is also a great option for when you need something to take to a Thanksgiving potluck or a quick and easy side dish.

Here’s how to make these three-ingredient bite sized roasted potatoes.

Ingredients

  • 2-3 lbs Bite sized potatoes
  • 1 packet Onion Mushroom Soup Mix
  • Olive Oil

Directions

1. Preheat the oven 400 degrees

2. Place your potatoes on a shallow baking pan and toss with a generous drizzle of olive oil.

3. Add the soup mix and toss to coat. Bake for 45 minutes, stirring halfway through the cook time.
