Let’s talk fall entertaining, y’all. My friends and I usually get together and enjoy watching those sappy Christmas movies, drinking hot toddies, and eating. Always eating. We love getting together and everyone bringing something potluck style. Usually, we’ll try to coordinate what we’re bringing so that we have all of our bases covered.
Desserts are always the first item to be claimed. What is it about the holiday season that makes sweets taste so much better? Anyways, after the sweets are taken care of, usually the sides and salad are claimed. That just leaves the main course. I think most people shy away from the main course because it can be difficult to know what to make that will stay fresh and hot all evening long. But, never fear! I’ve got the perfect recipe for you!
Now, I love having people over to enjoy the perfect October/November weather as much as the next gal, but one thing I don’t want to do is spend all of my time in the kitchen. After all, the hot cocoa and the fire pit are calling my name! But at the same time, I like serving something that has a “stick to your ribs” quality to it.
Here’s a dish I love to make for fall potluck get togethers with friends: Swedish meatballs. These are the perfect main course because they are easy to put together, you can make them ahead of time, and you can keep them warm in a slow cooker all evening long (you know, when you’re ready to go back for seconds).
I also have a great idea for drink to serve with your dinner. Tasty and refreshing Coca-Cola has two brand new flavors that are available for a limited time only! Coca-Cola® Cinnamon and Sprite® Winter Spiced Cranberry are a festive solution to the question – what beverage goes well with this assortment of foods? There are not only 12 ounce cans available, but also mini cans as well (check out the Coca-Cola® Cinnamon here and the Sprite® Winter Spiced Cranberry here). They’re available for a short time at Walmart this holiday season, so be sure to grab yours the next time you’re in the store!

So with the Hallmark movies playing in the background, I get these easy Swedish meatballs cooking. Savory meatballs are served on top of egg noodles and generously covered with a creamy gravy.
Ready to make these easy Swedish meatballs for yourself? Here’s the recipe:
Swedish Meatballs
Ingredients
For the meatballs
- 1 lb ground beef
- 1/4 cup breadcrumbs
- 1 small onion finely chopped
- 1 clove garlic finely minced
- 1 tablespoon parsley chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground allspice
- 1 egg
- 1 tablespoon milk
- 1 tablespoon oil
For the gravy
- 3 tablespoons butter
- 2 tablespoons flour
- 1 1/2 cups beef broth
- 1 cup whole milk
- 1 teaspoon smooth Dijon mustard
- 1 tablespoon grape jelly
- salt and pepper to taste
Instructions
- Make the meatballs. Combine all of the ingredients (except the oil) in a large bowl. Using a small scoop (about 1 tablespoon), portion out the meat mixture and roll into balls.
- Place on a cookie sheet and freeze for 5-10 minutes (this will help the meatballs stay round when cooking).
- Time to cook the meatballs. Heat the oil in a large skillet. Brown teh meatballs on all sides until they are cooked through. This will take about 6-8 minutes. When finished, remove the meatballs from the pan and set aside.
- Let's make some gravy. Turn the heat on the skillet to medium heat. Melt the butter in the pan and then add the flour, whisking constantly until the sauce turns medium brown.
- Pour the beef broth while whisking constantly and simmer until it thickens. Next, add the milk, mustard, and jelly. Simmer gently over medium-low heat until creamy. Season to taste.
- Let's put it together. Place the meatballs back in the gravy and warm until heated through. Serve with pasta, on a roll, or with mashed potatoes.
