Cinnamon Apple Oatmeal Cookies

Apple and cinnamon flavors are the perfect combo for these fresh cookies!

We were gifted a ton of apples this past week, so we decided to make something new – apple cookies!

They’re lightly sweet and taste like a warm apple pie – without the ice cream a la mode. But now I’m thinking I need another cookie with some vanilla ice cream…

It only takes a few apples to make these cookies and it’s a great way to get your kids to eat their fruit!

Can I use any kind of oats?

The best oatmeal to use is rolled old fashioned. Quick oats or steel cut oats are not good substitutions.

What kind of apples should I use in these cookies?

Granny Smith apples are perfect for these cookies! Their tartness counteracts the sweetness of the cookie perfectly. Sweeter apples like galas or red delicious make the cookies too sweet for this recipe.



Apple Cinnamon Oatmeal Cookies

Apple and cinnamon flavors are the perfect combo for these fresh cookies!

  • 2 1/2 cups all-purpose flour (scoop and level to measure)
  • 2 1/2 cups rolled old fashioned oats
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter (softened)
  • 1 1/2 cups packed light brown sugar
  • 2 large egg
  • 2 tsp vanilla extract
  • 2 cups finely chopped peeled Granny Smith apple (1/4-inch cube diced or smaller)
  • 4 tsp fresh lemon juice
  1. Preheat oven to 350°. Line a baking sheet with parchment paper.

  2. In a large mixing bowl, cream together butter, brown sugar, egg, vanilla extract.
  3. Add to the bowl flour, oats, cinnamon, baking soda and salt.
  4. Toss the apples with lemon juice in a small bowl. Add the apples to the mixture and combine.
  5. Scoop dough out 2 Tbsp at a time and drop onto prepared baking sheets spacing cookies 2-inches apart. Flatten them just slightly.
  6. Bake one sheet at a time in preheated oven until cookies are set, about 12 – 15 minutes.
  7. Let cool on baking sheet several minutes then transfer to a wire rack to cool completely. Store cookies in an airtight container.
