When preparing an appetizer, my go to items are usually charcuterie boards, crudites, and brie cheese rounds topped with something. After all, you need something to keep those hungry tummies at bay while you’re finishing up dinner, right? One such recipe that I like to serve is this one for a fresh cherry topped baked brie. The tangy sweet cherries mix perfectly with the creamy brie for a perfect bite on top of of a piece of toasty baguette.
Here’s the recipe for this easy baked brie with fresh cherries.
Baked Brie with Fresh Cherries
Ingredients
- 1 baguette sliced
- 1 small 13.4 ounce round of brie
- 1 cup fresh cherries pitted and halved
- 1 tablespoon honey
- 1 teaspoon balsamic vinegar
- 1 pinch salt
- 1/4 cup almonds sliced
Instructions
- Preheat the oven to 350 degrees F. Place the bread slices on a baking sheet and put it on the lower rack in the oven for about 7 minutes (or until lightly browned).
- Place the brie round on another baking sheet and put it on the middle rack in the oven for about 14 minutes. (heating both at the same time is a great time saver)
- While those things are baking away, heat a skillet or cast iron pan to medium high heat and add the cherries, honey, balsamic vinegar, and salt. Bring it to a boil, stirring occasionally, until the juices are slightly thickened (about 10 minutes).
- Transfer the brie to a serving platter and top it with the cherry mixture. Sprinkle the almonds on top and place your toast slices around it for serving.
