I have always loved Rachael Ray’s 30 minute meals. Do you remember that show? It’s not on anymore, but she always had the best ideas for meals that you could prep and cook in 30 minutes. The problem is that I don’t always have even 30 minutes to get dinner done and on the table.
With school pickup and then a baseball game starting not long after, a “real” meal that requires me to actually think has either got to be made ahead of time or thrown together last minute. Tonight’s meal was just that – thrown together – and it worked out!
This is where my love of flatbread pizzas come in. Flatbreads are great to use for weeknight dinners because they’re already cooked – you just add the toppings you want, bake, and voila! For tonight’s flatbread pizza concoction, I decided to go with just 4 ingredients – flatbread (I use Stonefire brand’s roasted garlic naan), garlic and herb cheese spread (I used Alouette brand), rotisserie chicken (that’s right, I didn’t even have to cook the chicken myself), and parmigiano reggiano (because of course we needed more cheese).
Both kids gobbled it up!
This store bought flatbread is topped with a cheesy garlic and herb mixture and covered with rotisserie chicken. This simple dinner idea will get dinner on the table quickly and easily!
Cheesy Chicken, Garlic, & Herb Flatbread Pizza
Ingredients
- 1 Flatbread storebought
- 1/4 cup Aloette garlic and herb cheese spread
- 1 cup Rotisserie chicken shredded
- 1 tbsp Parmigiano Reggiano Cheese shredded
Instructions
- Preheat the oven to 375 degrees.
- Spread the cheese spread all over the flatbread.
- Remove the flatbread from the oven and top with the parmigiano reggiano. Serve immediately.
