If you’ve been around my blog for a while, you know that breakfast is not really my thing. I don’t have a ton of breakfast recipes and that’s really because of one thing – I’m not a morning person.
You see, I like breakfast food, but my brain cells are not rubbing together that early in the morning. AM hours leave me seriously on the struggle bus.
But, when I’m on vacation and someone else is doing the cooking, I prefer savory breakfasts. Biscuits and gravy, omelets, etc are all the perfect way to start off a fun filled day.
Two of my all-time favorite breakfast dishes are chicken and waffles and eggs benedict. On one hand, you have a sweet waffle topped with fried chicken and slathered in maple syrup, yum. On the other, there’s an English muffin topped with Canadian bacon, a poached egg, and hollandaise sauce. Both are delicious and I can’t get enough of them.
Since I don’t do breakfast in the morning hours, I’m sharing what I made the other night when we had breakfast for dinner (which we do quite often). For this particular meal, I took my two favorite breakfast dishes and melded them together in order to make the most delicious thing ever, which I’ve called Chicken & Waffle Benedict.
It’s amazing, y’all. A crispy gluten-free waffle is topped with easy-to-make chicken sausage, a perfectly poached egg, and drizzled in creamy hollandaise sauce.
Can I Make This Recipe Gluten-Free?
You bet! The only part of this recipe that isn’t gluten-free are the chicken sausage links, so just swap those out for another protein of your choice or just serve without.
Can I Make This Recipe Dairy-Free?
Yes again! You can use non-dairy butter in the hollandaise sauce! For the waffles, you can just use almond, soy, or cashew milk and you’re good to go!

Open Nature® Gluten Free Pancake & Baking Mix
This certified gluten-free baking mix is perfect for making pancakes, waffles, biscuits, or anything you can dream up! It’s also got no added colors or flavors, so you know there’s nothing but good stuff in it. I chose to use the mix to make waffles for this recipe, so honestly the hardest part was just getting the right shape to the waffles. But the mix was easy to use and my kids gobbled up the waffles! You could even add something fun to the mix like fruit, chocolate, or peanut butter – of course, just a little syrup is perfect too!
O Organics® Large Brown Grade A Eggs
Can you have breakfast without eggs? Yes. Should you? No. I like how versatile eggs are! You can bake them into cakes, whip them into oblivion and make delicious fluffy meringues, or scramble them with whatever you have leftover in the fridge. For this recipe, I made the eggs two ways – poached and made into a sauce. They both turned out so good! And don’t forget, for any recipe using eggs, the fresher the better (unless you’re boiling the eggs whole).
O Organics Chicken Maple Sausage Links
When you make a chicken and waffle mashup recipe, you have to have chicken, waffles, and maple syrup. These yummy chicken sausages have the maple syrup in them, so you get the sweet deliciousness of them without all of the stickiness. I also love that they’re so easy to make! Just grab a few out of the freezer and pop them into the microwave for a few minutes – easy!

Chicken & Waffles Benedict
Ingredients
- 4 prepared waffles follow the instructions on the box of Open Nature Gluten Free Pancakes & Baking Mix
- 4 prepared sausages follow the instructions on the box O Organics Chicken Maple Sausage Links
- 4 poached O Organics Large Brown Grade A Eggs
- Chives chopped
Hollandaise Sauce
- 4 egg yolks
- 1 tablespoon lemon juice
- ½ cup unsalted butter melted
- 1 pinch cayenne
- 1 pinch salt
Instructions
Making the Hollandaise Sauce
- In a stainless-steel bowl, vigorously whisk the egg yolks and lemon juice together until the mixture is thickened and doubled in volume.
- Put a pot of water on the stove and bring to a low simmer. Place the bowl with the eggs in it on top of the pot of water (the water should not touch the bottom of the metal bowl).
- Whisk continuously (so the eggs don’t scramble) and drizzle in the melted butter until fully combined.
- When the mixture is doubled in volume, remove from heat. Add in the cayenne and salt and stir to combine.
- Set aside until ready to serve (add a couple drops of warm water if the mixture gets too thick).
Putting it All Together
- Place the prepared waffle on the plate.
- Put the sausage on top of the waffle.
- Place your poached egg on top of the sausage (if you need help with figuring out how to make a poached egg, I recommend straining the egg to get rid of the water in it and adding it to a large swirling vortex pot of hot water).
- Drizzle the hollandaise sauce all over the top of the poached egg and top with the chives.
