Cast Iron Skillet Recipes: Crave-Worthy Chocolate Chip Cookie

Confession: I used to be intimidated by the cast iron skillet. I mean, any kitchen tool that you don’t use soap to clean is confusing to me. But, over time, I’ve learned to love my skillet. I use it for everything from appetizers to desserts and I cannot wait to dive into this series with you! I’ll be showing you 3 ways you can cook in cast iron skillet that are anything but intimidating!

The first recipe here is the Chocolate Chip Cookie. If you’ve ever been to BJ’s Brewhouse, you know how addicting their ‘Pizookies’ are. The Pizookie is a cookie in a deep dish pizza pan basically. It’s thick and ooey gooey in the center. It’s perfect with ice cream or just by diving in with a spoon.

I was heading to a workday with other creatives a couple weeks ago and we all decided to bring a dish to share. As always, something sweet is my go to item, so I decided to bring this chocolatey treat. Everyone loved it! I know this one will be a hit at your house or next gathering too!

 

Chocolate Chip Cast Iron Skillet Cookie

Ingredients

  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 sticks of butter, softened
  • 2 large eggs
  • 1/2 cup sugar
  • 3 tsp vanilla extract
  • 11.5oz chocolate chips (Ghirardelli brand is the best)

Instructions

  1. Butter a 12 inch cast iron skillet. (I used a 10 inch, so I had to cook it just a bit longer than the instructions below)
  2. Preheat oven to 375 degrees.
  3. Mix eggs, both sugars, vanilla, and butter together.
  4. Add in the flour, baking soda, and salt to your wet ingredients. Fold in the chocolate chips last.
  5. Spread the mixture evening in the skillet (I make the very center a little more shallow than the edges to help it cook more evenly).
  6. Bake at 375 degrees for 18 to 20 minutes or until it is a nice golden brown.
