Dark Chocolate Ice Cream & Frozen Yogurt for the Plant-Based Diet

Recently, my friend started a plant-based diet for medical reasons. After hearing about many different diets, I was really interested to hear about how switching what she was eating improved her health! While “plant-based” does not mean a strict vegetarian, it does mean that the foundation of the diet rests upon foods that are grown in the ground, such as legumes, whole grains, fruits, vegetables, as well as nuts and seeds. Some plant-based diets also include fish and some lean meat as well, though this depend on the individual plan.

Extra fiber and potassium help stave off heart disease, and when whole foods displace refined carbohydrates it helps individuals steer clear of diabetes. The potent phytochemicals found in fruits and vegetables can help ward off cancer as well. Hypertension, also known as high blood pressure, can be greatly influenced by a plant-based diet. Research from the Harvard School of Public Health suggests that diets rich in fruits and veggies can actually work to significantly lower blood pressure!

But I get it, sometimes you just want the creaminess of a milk product. Have no fear, Silk is here! These delicious almond milk options come in several different flavors like peach, strawberry, and dark chocolate!

Dark Chocolate Ice Cream

Ingredients

  • 2 cups Silk Dark Chocolate Almondmilk
  • 1.4 cup Pure Maple Syrup (or Xylitol for sugar free)
  • 1 teaspoon Pure Vanilla Extract
  • 1/8 teaspoon salt

Instructions

Step One. Combine all ingredients in a medium size bowl. Transfer the mixture to an ice cream maker and use it according to the manufacturer’s instructions. Mine took about 15 minutes.

Step Two. Transfer the ice cream to a freezer safe container and freeze for about 30 minutes in order for it to harden a bit.

Step Three. Scoop and enjoy! I topped mine with toasted coconut, but fruits and nuts would be delicious too.
