Easy & Colorful Pasta Salad

Springtime is upon us and the last thing you want to do when it’s getting warmer outside is to be stuck indoors cooking over a hot stove. Because of this, the kiddos and I decided to have a backyard picnic to enjoy the beautiful weather and eat our dinner outside.

A Bit of Background on This Recipe…

What to serve though? I recommend this family favorite – this easy pasta salad. My husband’s cousin showed me this one a few years back and I will never forget it. It’s super simple to make, but how she taught me was hysterical! You see, she’s one of those people who is super particular about how they like things to be done. And apparently, my knife cuts at the time were not up to standard. She wanted the veggies and cheese cubes to all be the same size and well, let’s just say I didn’t do that. I’m proud to say now though, that my pieces are all the same size!

With pasta, colorful veggies, and even a little cheese thrown in, this one can’t be beat. And don’t worry if your ingredients are all different sizes…have fun with it! Let the kids put together all of the ingredients and mix it all up. There really is no wrong way of doing it!

I love taking it to family reunions, summer parties, and anytime a potluck dish is required during the warmer months. It’s cool, refreshing, and always tasty.

Ingredients Method

Ingredients
  

  • 1 lb rotini pasta cooked
  • 1/2 cup red bell pepper petite dice
  • 1/2 cup green bell pepper petite dice
  • 1/2 cup yellow bell pepper petite dice
  • 1/2 cup red onion petite dice
  • 1/2 cup cheddar cheese cubed
  • 1/2 cup mayonaise
  • salt and pepper

Method
 

  1. Combine all ingredients and season with salt and pepper to taste.
