A Convenient Breakfast that Even Non-Morning People Can Make

I’ve never been a morning person, like, ever. I mean, I’m up early every morning, but only because I have to. My brain is definitely not running at full capacity until probably 10am or so. It’s because of this that I never feel very inspired for breakfast. In our house, we definitely have cold cereal a lot more often than I would care to admit.

My husband grew up in a family where they got up and made a full breakfast every single morning. Boy, was he in for a shock when he married me! But every once in a while I try to do something more than stumble into the kitchen and pull out the first thing I can find.
I’ve found that I’m much more likely to prepare something if it’s mostly done already (like already mixed together and all I have to do is put it in the oven). My latest prepare ahead breakfast was this Spicy Jalapeno Cheese Sausage Quiche. I made the filling the night before, poured it into a refrigerated pie crust and popped it into the oven. So easy! And everyone got a real breakfast for once!

If you’d like to make this easy, make-ahead breakfast featuring Eckrich Smoked Sausage, here’s the recipe:

Ingredients

  • 3 Eckrich Jalapeno & Cheese Smoked Sausage Links
  • 1 refrigerated pie crust dough
  • 5 oz diced tomatoes & green chilies
  • 1 1/2 cups cheese
  • 6 eggs
  • 1 1/2 cup milk
  • salt and pepper
  • optional toppings: diced avocado & parsley

Instructions

Step One. Preheat the oven to 375 degrees F. Unwrap the refrigerated pie crust and put it in a 9″ pie pan.

Step Two. Cut the Eckrich Smoked Sausage into slices and add it to the bottom of the pie crust. Put the diced tomatoes and green chilies on top of that (if you don’t like a lot of spice, you can just add the diced tomatoes). Put the cheese on top of that.

Step Three. Whisk together the eggs, milk, salt and pepper (until frothy) and then pour then mixture over the cheese in the pie pan. Bake 35 to 45 minutes or until fully set in the middle.

Non-Morning Person Tip: To help save you time in the morning, you can make your filling the night before to limit your time in the kitchen.

If you’d like to make individual quiches or a bigger pan size, just use the ratio for the perfect quiche: 1 large egg to 1/2 cup of dairy.
