I love easy appetizers. There really is nothing better than making something your kids can help you put together and doesn’t take too long to make. This was the case with these prosciutto-wrapped bites of deliciousness.
I was stuck in the house with my kiddos for a week during the whole Hurricane Harvey situation. It was not fun. There was A LOT of togetherness and the kids definitely had a lot more energy than I had activities to keep them busy. Enter cooking. When you can’t leave your house for a week, you find ways to entertain yourself. And I also start experimenting with food (of course this could have been because I wasn’t able to go to the store and had to work what I had).
So, I got the kiddos at the table working! They were snapping asparagus and wrapping them like a pro. Yes, we had a couple casualties hit the floor, but the dogs are always on standby for just such occasions. 🙂

Ingredients:
- 6 ounces sliced prosciutto, halved horizontally
- 1 pound asparagus, trimmed
Directions:
- Working one at a time, start from the top of the asparagus spear and wrap the prosciutto slice around the asparagus at an angle, continuing the length of the spear. Repeat with the remaining ingredients.
- Heat a large skillet over medium high heat. Add the wrapped asparagus to the pan and cook until the prosciutto is crisp and the asparagus is tender (about 2-3 minutes).
- Serve immediately,
