Has this ever happened to you? I got out the meat to defrost for dinner. An hour or so later I realized there was nothing in me that wanted to actually cook that meal I had planned. Nope. It’s been a long day spent at the Children’s Museum today and all I wanted to do was count down the hours before the children went to bed and I could go relax in the tub.
Until then, I had to deal with the dogs barking, kids screaming because one stole the other’s toy, and then the doorbell rings. Oye. To my happy surprise, it was a delivery I had been anxiously awaiting from Suji’s Korean Cuisine. They sent me a few of their prepared meals and asked me to review them. This was the day. God had answered my prayers of laziness and the microwave got into action cooking up our dinner. Here’s a breakdown of what we received.
Udon Noodles with Chicken. This meal my son absolutely loved. The chicken was flavorful and the udon noodles and peppers mixed in were delicious as well. My son said “It slurps like spaghetti”, so if you’re looking for that feature, this meal has you covered.
Kimchi Rice with Uncured Bacon. First of all, I’m not a huge fan of kimchi so my opinion on this is pretty irrelevant. Something about the bitterness in it I just don’t like. But if you do like it and are short on time, this might be a good option for you.
Spicy Chicken and Potatoes. It had a great flavor with a little spicy kick. There were a few mushrooms I had to maneuver around (y’all know how I feel about those squishy things), but overall this was a really great dish!
Chicken Over Rice. This meal was the best of the bunch (yes, I did try at least one bite of each one). The flavor was mild with a little tang, and my one year old ate every last bid of it. She loved it. And I loved that it was a meal I could put in front of her and not have to have my food get cold while I’m cutting hers into minuscule size pieces.
If you’re like me and need to have some backup meals in the fridge for when you don’t feel like cooking, you can find meals like these at H-E-B, Costco, Target, and Whole Foods in the refrigerated meals section.
