The Reality of Becoming a Mom of Two & Mini Strawberry Cakelets

I admit it. When I had one kid I was really good at celebrating birthdays, making sure he had all the fun outfits for spirit week at school, and took tons of pictures of him in every season. And then I became a mom of two.

Wow. What a change adding another kid makes! Two people pulling me in two different directions, needing me in two different ways, and having two very different personalities. It was quite the rude awakening. Sadly, my daughter hasn’t had the same opportunities that my son had at the same age. I used my big camera with him almost weekly in new outfits at fun locations, but this poor girl has iPhone photos and those photo shoots are pretty much limited to the backyard or dinner table.

Birthday celebrations are a lot more low key now than in the past as well. Parties have turned into family only parties where we eat their favorite meal and then have a cake and presents. It’s a small celebration, but I almost prefer it.

My daughter’s 2nd birthday just passed and while I had the best intentions of having a big themed party (and the Pinterest board to prove it), it just didn’t happen that way. What I was able to do was make her cake, or should I say, cakelets?

These mini cakes were made with a boxed white cake mix, drizzled with strawberry puree, and topped with a celebratory banner from Avalon Sunshine. So while I didn’t go over the top like I wanted, I did get to spend time with my family eating macaroni and cheese and putting together a princess castle.

So if you’d like to make them for yourself, here’s the low down:

Ingredients:

  • 1 boxed white cake mix, prepared

  • 1/2 pint strawberries

Make a batter out of a regular old box of cake mix. I chose the white cake and only used eggs whites in it. Next, choose a fun pan to bake them in. Yes, you can use a cupcake pan or regular 13×9, but where’s the fun in that? I love this one.

Next, you’ll want to blend your strawberries until you have gotten rid of any chunks of fruit. You can use a blender, but I love using my immersion blender. Once blended, spoon the strawberries over the tops of the mini cakes.

And what’s a cake without the perfect topper? I love this pennant banner that Avalon Sunshine made for my baby girl and she has some other really cute things over in her shop.
