No Bake Kiwi Tart

When my friend invited me to a kiwi party, I knew exactly what I needed to bring in order to match the occasion. This delicate dessert make look indulgent, but it isn’t overly sweet at all! It features a beautiful layer of kiwi fruit atop a mascarpone and heavy cream filling, with a graham cracker crumb base. Whip this quick dessert up for your summer parties!

Ingredients

  • 1 1/2 cups crushed graham crackers
  • 6 tablespoons melted butter
  • 1 tablespoon sugar
  • 3/4 cup heavy cream
  • 1 cup mascarpone cheese
  • 3 tablespoons sugar
  •  1 teaspoon vanilla extract
  • sliced kiwi for topping

Instructions

Step One. Add the graham cracker, melted butter, and 1 tablespoon sugar to a medium sized bowl and combine well or until the texture is similar to wet sand. Press the mixture into the bottom and sides of a small tart pan. Place the pans in the refrigerator for 1-2 hours to set.

Step Two. Add the heavy cream to a stand mixer and whisk until soft peaks form. Take out of the bowl and set aside.

Step Three. Add the mascarpone cheese, vanilla, and 3 tablespoons sugar to the stand mixer and combine until it’s smooth and lump free.

Step Four. Gently fold the whipped cream into the mascarpone cheese mixture. Then place it back in the stand mixer and whisk it until it’s lump free.

Step Five. Carefully spoon the filling into the tarts and place in the refrigerator for 1-2 hours to set. Top with fresh kiwi and serve immediately.
