I love a fresh vinaigrette. They are just so much more refreshing! And when you have a {typically} heavy meal like Thanksgiving, you need something lighter on the table to balance it all out. This easy vinaigrette is simple to put together and you can also put your kids to work shaking it up if they need something to keep busy with. Top the salad with a little freshly shaved parmigiano reggiano and you’re set!
Ingredients
- 1/2 cup lemon juice
- 1/2 cup olive oil
- 1/2 cup finely grated parmigiano reggiano cheese
- 1 tablespoon honey
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
Instructions
Combine all ingredients by whisking together or putting in a tightly sealed mason jar and shaking it vigorously.
