At the beginning of the year, I went on a cleanse. My friend sells products for one of those multi-level marketing companies and I took the bait. Basically, for 30 days I cut out dairy, gluten, soy, and sugar. Y’all. Do you know how difficult it is to make dinner for a family when one person has a limited ingredient list? Oye.
But here’s the cool thing. I actually loved it. After I got used to reading labels and figured out what I could actually eat, I no longer felt limited! In fact, I felt empowered!
You see, when you eat right, you feel good. And that’s exactly what happened with me. The kids even loved most of the meals I made and we’ve decided to make it a new way of life.
And then the virus hit. What a weird few months it’s been, am I right? I don’t know about you, but at our house, we’ve been keeping ourselves occupied by doing schoolwork, going outside every chance we get, and trying out new recipes.
So how did this impact my eating habits? Well, the cool thing is that since I had gotten used to planning my meals out and my grocery lists included everything I would need for two weeks at a time, it was easy to just order everything for pickup from Randalls’ Drive Up & Go™ service. I just order the items online, park in a designated parking space at the store, and a Randalls employee loads the groceries in my car. It makes those bi-monthly shopping trips so easy and convenient!
While I wish I could say I totally stuck to the new “diet”, I sadly did not. But one recipe I created when I was on my game was this plant-based caramel cluster shake. I know what you’re thinking…and yes, it was even more delicious than it sounds!

Open Nature® Cashew Milk Scandal-less Ice Cream in Salted Caramel Cluster
This ice cream fake out has chunks of cashews, dark chocolate and swirls of salted caramel throughout. I could tell there was no “cream” from the texture (it’s more like gelato consistency), but I couldn’t taste the difference. This is the perfect dessert option if you are unable to consume dairy, but you still want ice cream!

I had never tried cashew butter before, but it was really good! It has a thinner consistency than peanut or almond butter, but it still has that fresh, nutty flavor.

Plant-Based Caramel Cluster Shake
Ingredients
- 1 container Open Nature Cashew Milk Scandal-less Ice Cream in Salted Caramel Cluster
- 1 cup O Organics Plain Unsweetened Almond Milk
- 2 Tablespoons Open Nature Creamy Cashew Butter
- 1 Open Nature Compostable Drinking Straw
Instructions
- Blend all ingredients together and serve immediately. Use a straw to enjoy this shake in all its decadent glory.
