Spicy Pineapple Salsa

After making that delicious spicy grilled pineapple, I thought, why not take it a step further and make some other Mexican-inspired snacks with this delicious fruit?

Being in Texas we have no shortage of delicious Tex-Mex and Mexican food. If it’s grilled or has jalapenos in it, we’re all about it!

But sometimes, I want something refreshing to go along with all of that heavy food. Pineapple is the perfect choice! I went to a Brazilian steakhouse before and they served grilled pineapple at the end of the meal. Why pineapple? Apparently, pineapple has enzymes in it that helps to break down dense meats like beef – so it’s perfect to help you not feel so full for so long.

Starting with pineapple, I decided to make a new version of a Tex-Mex staple, salsa. Whatever you call it – hot sauce, salsa, etc – the stuff is delicious and the flavor changes based on where you are and who taught you how to make it.

This pineapple salsa is sweet, crunchy, and has a little zing of cayenne pepper that will make our taste buds do a mariachi dance in excitement!



Spicy Pineapple Salsa

Sweet, fresh pineapple joins its bell pepper and onion pals to create a tasty spin on a Mexican salsa.

  • 1 1/2 cups small diced pineapple
  • 3/4 cup small diced orange pepper
  • 3/4 cup small diced red pepper
  • 1/2 cup small diced red onion
  • 2 Tablespoons minced cilantro
  • 1 teaspoon lime zest
  • 3 Tablespoons fresh lime juice
  • 1 teaspoon cayenne
  • 1/2 teaspoon salt
  1. Combine all of the ingredients and serve in pineapple hulls.
