How to Stay Cool As Coleslaw at Your Next Summer BBQ

Cooking dinner in the summer is the worst! After the house has been baking in the sun all day, I’m supposed to get in the kitchen and turn on the oven? No, thank you. I avoid standing over a hot stove at all costs when it comes to those sweaty summer months. This is typically the time of year when I get creative with our meals.

In gearing up for July 4th, I’ve been trying out some recipes that don’t involve me standing over a hot grill outside, either, and I thought I’d share what our plans will include.

First off, my slow cooker will be doing the work for me. I love making pulled pork and bonus it also keeps the meat warm while we’re getting everything settled. I serve it with sweet rolls and top it with coleslaw.

I make my side dishes in the morning and reheat them. Baked beans and creamed corn are a staple in summer barbecues, but I don’t want to spend an entire afternoon stirring away at the stove. So instead, I make the side dishes in the morning and then reheat them in the microwave later that evening. I also make some deviled eggs and a cake the night before!

I’ve also found the easiest coleslaw recipe on the planet.
