Apple Cinnamon Oatmeal Cookies

Apple and cinnamon flavors are the perfect combo for these fresh cookies!

Ingredients
  

  • 2 1/2 cups all-purpose flour scoop and level to measure
  • 2 1/2 cups rolled old fashioned oats
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter softened
  • 1 1/2 cups packed light brown sugar
  • 2 large egg
  • 2 tsp vanilla extract
  • 2 cups finely chopped peeled Granny Smith apple 1/4-inch cube diced or smaller
  • 4 tsp fresh lemon juice

Instructions
 

  • Preheat oven to 350°. Line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together butter, brown sugar, egg, vanilla extract.
  • Add to the bowl flour, oats, cinnamon, baking soda and salt.
  • Toss the apples with lemon juice in a small bowl. Add the apples to the mixture and combine.
  • Scoop dough out 2 Tbsp at a time and drop onto prepared baking sheets spacing cookies 2-inches apart. Flatten them just slightly.
  • Bake one sheet at a time in preheated oven until cookies are set, about 12 - 15 minutes.
  • Let cool on baking sheet several minutes then transfer to a wire rack to cool completely. Store cookies in an airtight container.
