20 Minute Zucchini & Red Onion Flatbread

I am obsessed with flatbread pizzas. Even the word flatbread sounds so much more fancy than “pizza” don’t you think?

Flatbreads make the perfect appetizer. They can be made ahead of time and then popped in the oven right before guests arrive. They’re a great way to say, “Welcome to my home. Get ready to eat,” without completely filling someone up before dinner.

Recently, I made a cheesy flatbread topped with thinly sliced zucchini and red onions. They’re colorful, savory, and mouth-watering! Who wouldn’t want a little taste of this?

Ingredients

  • 1 pre-made flatbread
  • 3/4 cup garlic-and-herb cheese spread (such as Alouette)
  • 3/4 cup finely grated Parmesan cheese
  • 3 tablespoons chopped fresh Italian parsley
  • 1 small red onion, thinly sliced
  • 1 7- to 8-inch-long zucchini (yellow or green), cut crosswise into 1/8-inch-thick rounds
  • Olive oil

  • salt and pepper

INSTRUCTIONS

Step One. Preheat oven to 400°F. Line baking sheet with parchment paper.

Step Two. Put the pre-made flatbread on the baking sheet and spread herb cheese all over it, leaving 1/2-inch plain border. Sprinkle with the Parmesan and 2 tablespoons parsley.

Step Three. Arrange 1 row of zucchini down 1 long side of dough. Arrange onion rounds in row alongside zucchini. If you would like, you can make two rows of each or just one. It tastes great either way!

Step Four. Brush vegetables with oil; sprinkle with salt and pepper. Bake until cheese is puffed up and it’s deep brown at edges, about 15 minutes. Sprinkle with 1 tablespoon parsley.
