Hurricane Harvey Guilt & Low-Carb Cauliflower Creamed Spinach

Sometimes, you just want comfort food. Warm, cheesy, make you feel fat after you eat it, comfort food. That was definitely the case during the whole Hurricane Harvey debacle. While I was very blessed to have not gotten water in my home or even lose electricity, there was a full week last month where absolutely nothing happened. We couldn’t leave our house because of flooding. We couldn’t play outside because it was raining. All we could do is watch the news and cry. Every day, we watched as people were wading through high water, being rescued from their homes, and carrying all of their important belongings in a trash bag on their arm. It was heart breaking.

Story after story caused ugly cry after ugly cry. I can’t imagine what those people went through and my heart longs to help them. I think the point that I really “lost it” was when I saw a post on Facebook from a friend of mine who is 9 months pregnant and she was pleading for someone to come rescue her, her husband, 3 year old son, and their dogs from their attic. The water was waist deep and rising higher every minute. And there was nothing I could do. There was nothing her parents could do. There was nothing her sisters could do. There was nothing anyone could do – unless they had a boat. It was absolutely gut-wrenching.

But during the entire ordeal, I, like a lot of others weathering the storm, ate. And ate. And ate. It’s like all I could do was feed my feelings with bad-for-me things to eat. One break in the food coma, I actually mustered up the energy to make something that was on the keto diet that I had so easily abandoned. And that’s where this recipe for cauliflower creamed spinach came forward. It’s cheesy and delicious, so if you’re looking for a low-carb option, this here is for you!

Ingredients:

  • 5 oz baby spinach
  • 1 small cauliflower head (cut into florets)
  • 1 small onion (diced)
  • 1/2 cup shredded mozzarella
  • 2 tablespoons cream
  • 1 tablespoon butter
  • 1/2 teaspoon nutmeg
  • pinch of ground cloves
  • salt and pepper

Instructions

  1. Turn on the broiler.
  2. Bring medium pot of water to a boil. Once it boils rapidly, add the cauliflower florets and boil for 10 minutes.
  3. When the cauliflower is cooked, use a slotted spoon to scoop the florets into a food processor. Blend the cauliflower until smooth with the cream and butter. Season with salt and pepper.
  4. While the cauliflower boils, saute the onion in a little bit of butter until soft and then add the spinach, nutmeg, and cloves and cook until wilted.
  5. Now mix the cauliflower, spinach/onion and cheese together, adjust seasoning if needed, and scoop into a cast iron pan or small baking dish.
  6. Slide under the broiler until the cheese is golden brown.

The family I spoke about above is slowly rebuilding their lives now. They have ripped out all of their walls, cabinets, built-ins, and personal belongings. Some things like clothes were able to be salvaged, but pretty much everything had to be tossed out.
