There is nothing I hate more than doing the dishes. Seriously. When I’m cooking, I will do whatever is necessary to not dirty an extra dish. My husband, however, is the exact opposite. He will dirty every last dish in the kitchen – and it doesn’t bother him to do the dishes afterwards. Weird.
But out my disdain for sinkfuls of dishes came a recipe that makes everything in one pan. That’s right – everything to make the protein and one side is all in one glorious pan. Winning! So if you’re like me and you need a reprieve from dish duty, here’s a great weeknight dinner that will allow you get dinner on the table quickly and make the cleanup a breeze!
This Parmesan chicken with sauteed zucchini is the perfect weeknight meal that will have you at the dinner table quickly and leave you with little to clean up afterward.
One Pan Parmesan Chicken with Sauteed Zucchini
Ingredients
- 2 Chicken Breasts sliced in half (or tenderloins)
- ½ cup plus 1 Tablespoon grated parmesan divided
- 8 Tablespoons butter divided
- ½ cup Italian Bread Crumbs
- ¼ cup flour
- 2 garlic cloves minced
- 2 medium zucchini sliced
Instructions
- In a large skillet, melt 2 Tablespoons butter.
- To make the chicken: Melt remaining 4 tablespoons of butter in a shallow dish. In another shallow dish, combine the bread crumbs, parmesan cheese, and flour. Dip the chicken in the butter and then coat in the bread crumb mixture and place in skillet.
- Cook on each side for about 3-4 minutes until the outside is crispy and the chicken is cooked throughout. Set aside on plate.
- Add 2 Tablespoons of butter back to the skillet and saute the minced garlic for a minute. Add the zucchini to the skillet and saute until tender. Salt and pepper to taste and add 1 Tablespoon parmesan. Add the chicken back to the skillet and heat for a minute or so. Serve immediately.
