One Pot Rotini Al Fresco

This quick, microwavable rotini meal is perfect for any weeknight dinner! And since it's in the Mediterranean diet, you know it's got fresh ingredients!

Ingredients
  

  • 4 garlic cloves minced
  • 2 cups cherry tomatoes
  • 3 cups (750 mL) uncooked Barilla Chickpea Rotini
  • 3 1/2 cups chicken broth
  • ½ tsp salt
  • ½ tsp coarsely ground black pepper
  • cups lightly packed fresh basil leaves thinly sliced and divided
  • 1 oz Parmesan cheese grated
  • oil for spritzing

Instructions
 

  • Spray a dutch oven or microwave safe bowl with olive oil. Put the garlic and tomatoes in the bowl. Microwave, covered, on HIGH 4–5 minutes. Add pasta, broth, salt, and black pepper.
  • Return the bowl to the microwave; cover and microwave on HIGH 10–12 minutes or until pasta is tender, stirring after 5 minutes.
  • Carefully remove the baker from the microwave and remove the lid, lifting it away from you. Add the basil and cheese to bowl; mix well. Garnish with reserved 2 tbsp basil and additional Parmesan cheese if desired.

Notes

Substitute ½ cup white wine (such as Chardonnay) for ½ cup chicken broth, if desired.
