Raspberry Scones

Ingredients
  

Scones

  • 2 cups flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 6 tablespoons butter, chilled and cut into pieces
  • 1 egg beaten
  • 1 teaspoon vanilla
  • 1/2 cup cream
  • 2 tablespoons cream
  • 1 cup raspberries frozen or fresh both work well

Egg Wash

  • 1 egg beaten
  • 1 tablespoon cream

Instructions
 

  • Whisk together the flour, sugar, baking powder, and salt.
  • Mix the butter in the dry mixture using a pastry cutter. The mixture will be crumbly.
  • In a separate small bowl, combine the cream, egg, and vanilla. Add the wet ingredients to the flour mixture and stir until just combined.
  • Knead the dough slightly on a floured surface. Add the berries to the mixture and knead just enough to mix the berries throughout the dough.
  • Form the dough into an 8" round circle, about 1 1/2" thick. Cut the circle into 8 pie-shaped wedges.
  • Place the wedges about 2 inches apart on a parchment-lined baking sheet. Brush the tops with egg wash.
  • Bake in a 400 degree oven for about 20 minutes, or until nicely browned.
